Ingredients

  • winter squash
  • salt

Method

  1. Prepare as for Steamed Winter Squash. ( Steamed Winter Squash. )
  2. Cook in boiling salted water, drain, mash, and season.
  3. Unless squash is very dry, it is much better steamed than boiled.

Method

  1. Cut in pieces, remove seeds and stringy portion, and pare.
  2. Place in a strainer and cook thirty minutes, or until soft, over boiling water.
  3. Mash, and season with butter, salt, and pepper.
  4. If lacking in sweetness, add a small quantity of sugar.
