Ingredients

  • winter squash
  • butter
  • salt
  • pepper

Method

  1. Cut squash in halves, remove seeds and stringy portion, place in a dripping-pan, cover, and bake two hours, or until soft, in a slow oven.
  2. Remove from shell, mash, and season with butter, salt, and pepper.

Kitchen Notes

  • A dripping-pan is a roasting pan.
  • Original calls for a slow oven — about 300°F.
