Ingredients

  • sardines
  • equal quantity yolks of hard boiled eggs
  • salt
  • cayenne
  • a few drops lemon juice
  • olive oil or melted butter
  • thin slices buttered bread prepared as for Bread and Butter Folds

Method

  1. Remove skin and bones from sardines, and mash to a paste.
  2. Add to an equal quantity of yolks of hard boiled eggs rubbed through a sieve. ( Boiled Eggs. )
  3. Season with salt, cayenne, and a few drops of lemon juice; moisten with olive oil or melted butter.
  4. Spread mixture between thin slices of buttered bread prepared as for Bread and Butter Folds. ( Bread and Butter Folds. )
