  • small fillets of beef
  • butter
  • cock's-comb shaped croutons
  • Sauce Figaro
  • Brussels Sprouts or String Beans

Method

  1. Wipe and sauté small fillets in hot omelet pan.
  2. Arrange in a circle on platter with cock's-comb shaped croutons between, and pour sauce in the centre.
  3. Serve as a luncheon dish with Brussels Sprouts or String Beans. ( String Beans. )
