Farina Cakes with Jelly.

Ingredients

  • 2 cups scalded milk
  • ¼ cup sugar
  • ⅓ cup farina (scant)
  • ⅛ teaspoon salt
  • 1 egg
  • a cube for each square jelly

Method

  1. Add farina, sugar, and salt to milk, and cook in double boiler twenty minutes, stirring constantly until mixture has thickened.
  2. Add egg slightly beaten, pour into a buttered shallow pan, and brush over with one egg slightly beaten and diluted with one tablespoon milk.
  3. Brown in oven.
  4. Cut in squares, and serve with a cube of jelly on each square.

Kitchen Notes

  • Scald milk means heat it until very hot, not boiling.
  • A double boiler is a bowl or insert set over simmering water.
