Cheese Fondue.

Ingredients

  • 1 cup scalded milk
  • 1 cup soft stale bread crumbs
  • ¼ lb. mild cheese, cut in small pieces
  • 1 tablespoon butter
  • ¼ teaspoon salt
  • few grains cayenne
  • 3 egg yolks
  • 3 egg whites

Method

  1. Mix first five ingredients, add yolks of eggs beaten until lemon-colored.
  2. Cut and fold in whites of eggs beaten until stiff.
  3. Pour in a buttered baking-dish, and bake twenty minutes in a moderate oven.

Kitchen Notes

  • Scald milk means heat it until very hot, not boiling.
  • Original calls for a moderate oven — about 350°F.
