Method

  1. 1 lb. steak from top of round.
  2. Wipe steak, remove all fat, and cut in small pieces.
  3. Place in canning jar, cover; place on trivet in kettle and
  4. surround with cold water. Allow water to heat slowly,
  5. care being taken not to have it reach a higher temperature
  6. than 130° F. Let stand two hours; strain, and press the
  7. meat to obtain all the juices. Salt to taste.

Kitchen Notes

  • A trivet is a rack that lifts the pan above the kettle bottom.
